Have fun making this 30 minute short meal, healthy for the heart and nice for a family dinner.
- 2 tablespoons olive oil
- 2 boneless chicken breasts cubed
- 2 sweet potatoes cubed
- 1/2 red onion chopped
- 1 small eggplant cubed
- 2 cloves garlic minced
- 1 tablespoon minced fresh ginger root
- 2 teaspoons ground turmeric
- 1/2 cup low sodium chicken broth
Pour your olive oil into a skillet that is over a medium high flame. Place the chicken on top and cook until golden brown, which usually takes up to 5 minutes. Add in the potatoes and the onions for 3 minutes. The eggplant, ginger turmeric and garlic will be tossed in and cooked until you can smell it, which is about 1 minute. Your broth is then poured and wait for it to thicken whilst stirring it, which takes a minimum of 20 minutes.
