Chowder is a nice heart warming soup to have, especially when you are sick or the weather might be freezing. Its healthy and super easy to make, and the cauliflower is there to help reduce the carb intake for those carb fiends out there, while still being delicious!

Ingredients

  • 4 slices bacon diced
  • 2 tablespoons unsalted butter
  • 2 cloves garlic minced
  • 1 onion diced
  • 2 carrots peeled and diced
  • 2 stalks celery diced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 head cauliflower chopped
  • 1 bay leaf
  • salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped parsley leaves

Instructions

Make some bacon first, and make sure its crispy so you can break it up and sprinkle it!

Heat up a pot with a medium flame, and let butter melt inside. Add your onions, carrots, garlic and celery. Cook and stir the ingredients for up to 4 minutes. Add the cauliflower and bay leaf and mix it and wait for it to become a little tender for another 4 minutes.

Throw and whisk your flower, then throw in your chicken broth and milk and whisk until it gets nice and thick. That takes about 4 minutes as well.

Get it to boil, and once the boil comes, reduce the heat and let it simmer until cauliflower gets tender. That process take up to 15 minutes. Throw on your seasonings like salt and pepper. If you want it to be less thick add more milk.

Sprinkle your bacon and parsley and you got yourself a nice hot soup!
